Perfection.

It is a strong, subjective, controversial and hard-to-define concept. But we are driven by that Holy Grail – to create the perfect pizza. Sometimes we get it right. No. Most times we get it right.

Every single detail is taken care of. Leave nothing to chance. Every single pizza has to be a work of art. Every single pizza has to be a masterpiece. Every single pizza has to be as if it was your last pizza while on death row.

We think that by deconstructing the concept, removing the bullshit and going back to the roots we have created what must be one of the best pizzas in the world. At last, an honest, true, authentic, genuine, pizza as it was created 130 years ago.

That is a bold statement.

But consider this...

Find anyone who would use fresh organic water buffalo mozzarella on their pizza.

Find anyone who would mill their own flour from a blend of five different grains for their pizza.

Find anyone who would use only the finest organic San Marzano tomatoes on their pizza.

Find anyone who would use only fresh tuna on their pizza.

Find anyone who would use the most luscious Organic Extra Virgin Olive Oil on their pizza.

Find anyone who would smoke their own pancetta, bacon, sausage, fish, mozzarella.

Find anyone who would only use beech to fire up the oven to bake the pizza.

Find anyone who will only use sourdough for the base of the pizza.

Find anyone who would only use the finest, most traditional ingredients on their pizza like real salted anchovies, salted capers, baked black olives, fresh herbs, wholemeal flour.

Now, if you are lucky, find the one who does all these.

Well, that is us.

We are good; we know it. Maybe even the best.
